The short answer is yes!
When booking a vacation package (normally a hotel and flight) there are more opportunities for payment plans. Booking a hotel only can also have opportunities for payment plans.
Payment plan example is:

Pay the deposit. If flights are included, full payment of flights are due at the time of payment. If the booking is hotels only, it is typically 20% down as a payment, $200-$400 depending on the cost of the booking. *this percent is subject to change and based off individual itineraries/bookings

Once the deposit is paid, my clients have until the final payment day to pay the entire booking. They can pay weekly, monthly or whatever suits their financial needs. This would be considered the payment plan.

The final deposit is paid before the final payment day. I suggest that this is done about a week before just to make sure there are no technical issues or issues with the booking.
Once the final price is known, I have even had clients work out a payment plan with me and tell me when they want their credit card charged. I had them sign a credit card authorization form giving me the okay.
Payment plans can make traveling more affordable and easier for travelers!
I can also pay with multiple credit cards on most bookings! This is extra convenient with groups or individuals that want to pay separately. Once full payment is made or after the trip, I send my clients an invoice detailing their payments.
